So for my b-day my FBiL (Favorite Brother-in-Law) made a traditional cheesecake. My bday celebrations growing up had always included a cheesecake with cherry pie filling on top. Sounds kind of gross, but kind of awesome at the same time.

A Classic Cheese Cake made Vegan with Cherry Topping and Oreo Crust prep pan-- grease a 9" spring form pan and pre-heat oven to 350F crust-- 2 cups Newman O's or Trader Joe's 'oreo' cookie crumbs*
1/4 cup plus 1 tablespoon sugar 1/4 cup melted butter substitute (miyoko's) *Using a knife scrape off creamy filling (if you don't eat it right then this can be added to the cheese cake filling. 1) In a blender grind up cookies and sugar 2) Pour in melted butter, and blend. The cookie crumbs should be "buttery"enough that they begin to cling together. If not add another tablespoon ofmelted butter. 3) Pour mixture, into pan and press evenly against the bottom. 4) Put crust in oven 5-7 mins. You want it to begin to toast slightly so it wont be soggy later. But, be very careful not to let it begin to brown. filling-- 2 lbs vegan cream cheese* at room temp 1 cup to 1 1/4 cups sugar 1 1/2 teaspoons lemon zest 3 tablespoons lemon juice 1 teaspoon vanilla extract 3 tablespoons egg substitute *Different brands of vegan cream cheese behave differently when heated. I love Daiya for its tangy flavor, but it becomes oily when heated. I used 1lb of Daiya and a 1lb of Toffutti for this recipe 1) As crust is cooling, turn down oven to 325F 2) In large mixing bowl, blend sugar with cream cheese, add in one package of cream cheese at a time, and blend until smooth. 3) Add, lemon zest, lemon juice and vanilla mix in thoroughly. 4) Add, and mix in egg substitute 5) Pour into pan, over cookie crust, and put back into oven 40-60 mins. 6) This is when most recipes say, bake until center is firm not runny. However, I found the vegan cream cheese, melted into thick stew, the top began to form a light brown and it appeared on the verge of boiling. No worries, take it out and let it cool several hours on a rack, it will begin to set up. Finish cooling it in the frigerator, and it will set up fully. topping-- 12-16 oz canned tart cherries (I used Woodford Reserve canned Cherries:) 1) Once the cake is completely cool, top with cherries and enjoy!
